I love the Local Farmers Markets every Thursday.
Just recently there has been oodles of lovely fresh green beans, some of the stalls had picked them just that morning so of course I couldn’t resist especially as they were spray and chemical free.
Being a fan of vegetables in my salads, a green bean salad suits me perfectly for lunch or dinner – or both!!
You could add steamed chicken breast, or boiled eggs for a simple take-to-work lunch, or a sizzling lean steak to complete your dinner meal. Either way, this salad is quick to prepare ahead of time and easy to store making it a great option for those long days when you’re tempted to pick up take away on the way home!
